RESTAURANT INSPECTIONS

— All reports are from regular food service/ food store inspections unless otherwise noted.

◊Critical violations are defined as items that relate directly to factors that lead to food-borne illness, and must be corrected immediately.

◊Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Temporary Fair Permits

Porky Chicks BBQ

Critical violations: Cold prep table is not maintaining cold food at 41 degrees or below. Wash, rinse and sanitize all equipment held at room temperature.

Noncritical violations: Leak in three-compartment sink. Excessive flies in trailer.

Carsten Tent Concessions

1303 SW B St., Bentonville

Critical violations: Need both hot and cold running water at hand-washing sink. Need new test strips for sanitizer. Strips are wet and starting to get moldy.

Olde Tyme Foods

Noncritical violations: Need some sort of non-absorbent flooring.

NWA Cattleman's Association

14881 Pritehand Rd., Sulphur Springs

Noncritical violations: Need hand washing with water free flowing. Need three compartments to wash, rinse and sanitize all equipment. Need test strips for sanitizer bleach.

Need some sort of flooring to prevent sloshing on rainy days.

Sugar Shack

Critical violations: Refrigerator is holding food at 55 degrees. Do not use Scrubbing Bubbles for food contact surfaces.

Noncritical violations: Need test strips for sanitizer.

Noncritical violations: Crockpot is not keeping hot-dogs hot.

Noncritical violations: Need new test strips for sanitizer.

Critical violations: Refrigerator is not keeping food at 41 degrees or below. Sanitizer is too strong.

Noncritical violations: Need thermometerin upright refrigerator. Need screens for fly control or other option. Need test strips.

Sept. 16

Dixie's BBQ Pit

15 S. Dixieland, Lowell

Critical Violations: Bleach sanitizer solution was at 200 ppm. Must be between 50 and 100 ppm. Spray bottle did not have label indicating contents.

Noncritical violations: Storing boxes on floor up front under prep table. Boxes should be stored at least six inches off floor.

Coleman's Children's Academy

103 Presidential Dr., Lowell

Critical violations: Eggs stored over ready to eat foods.

Noncritical violations: Spray bottle sanitizer concentration was over 400 ppm.

Marion's Donuts

806 W. Walnut, Rogers

Critical violations: No soap or papertowels at hand-wash sink. Sausage was 46 degrees. Milk was 43 degrees. Must be kept at 41 degrees or below. Spray bottle did not have label.

Noncritical violations: Containers of frosting are not being covered. Lid to large flour containers are cracked and repaired with duct tape. Need to be replaced. Back area where trash is stored and leaking on floor. Must be cleaned. Pepsi machine needs to be cleaned.

Ice machine needs to be cleaned.

Sept. 18

Kim's Preschool

Noncritical violations: Eggs should not be stored above any ready to eat foods. Thermometer needed in fridge. Need test strips.

Sept. 21

Bentonville Bowling Center

Noncritical violations: Light shield needed in kitchen area.
