Washington County restaurant inspections: violations include food at improper temperature, cooks not washing hands properly

Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Critical violations: Employee made bare-hand contact with ready-to-eat food. Ice cream machine was holding milk products at 42 degrees.

Noncritical violations: Cold-holding unit had standing water in the bottom.

Critical violations: Food employee made bare-hand contact with ready-to-eat lettuce while preparing a hamburger.

Noncritical violations: On the outside walk-in cooler, there is a 2-inch gap at the bottom of the door that is open to the outside even when the door is closed; the gap must be be closed to protect against the entry of insects and rodents into the unit.
