The new pizza joint, located at 5519 Hackett Rd in Springdale, offers pizza, pasta and salads from Chef Michael Robertshaw and Meredith Butler, the duo behind the popular Mediterranean food truck Persephonē on Wheels.

"The pandemic put Persephonē on ice. We continue to look for just the right space for her. But we have exciting news in the meantime!" the food truck announced in a social media post earlier in the summer. "We've been working on something we can't wait to share with you! Our first brick & mortar restaurant, Pizzeria Ruby!"

In addition to pizza, children's specials, gelato, house cocktails and a selection of beer and wine are also available, according to its website.

Customers can stop by the restaurant for a slice between 4 p.m. and 10 p.m. Tuesday through Friday and 4 p.m. to 11 p.m. on Saturday.

The restaurant moved earlier this week to offering takeout, but not indoor dining, due to the recent surge in covid-19 cases and hospitalizations in the region.

"We'd like to see how everything shakes out this week," the restaurant said in a social media post. "We will be looking at our operations, table spacing etc. to ensure we reopen indoor dining as safely as possible."

Plans to expand its hours to serve lunch are in development, according to social media posts.

A development plan for Walk-Ons Bistreaux northwest of Wedington Drive and Interstate 49 was approved July 12 by the Fayetteville Planning Commission.

The Lousiana chain's website lists Fayetteville as a location "coming soon."

Walk-Ons has locations in Rogers, Fort Smith and Conway.

Grub's Bar & Grille closed its Uptown Fayetteville location last month after 10 years of business.

The sports bar at 3467 N. Shiloh Dr. said that its restaurants in downtown Fayetteville and Rogers would remain open in a July 21 social media post.

"While we don't have a new home for Uptown at the moment, we hopefully will find one soon," the post says. "A huge thank you to the customers for your support over the years. You guys have been amazing."


Flying Burger & Seafood has also closed its Fayetteville location.

"We have permanently closed our location due to covid-19," the restaurant at 4280 Martin Luther King Blvd. near Farmington announced in a July 27 social media post. "Thank you to our customers for all of your support throughout this difficult time."
