The wide sifter sits atop a standard 4-quart mixing bowl, leaving both hands free to measure and scoop. A scraper that snaps into the handle quickly transforms this sifter to a sieve allowing for smooth purees.
When it comes time to sift, wide handles on each side provide plenty of space to grip while your other hand gently taps to aerate and sift -- be careful not to overfill it as there is more upward dust than with a traditional cup-style sifter -- or simply leave the sifter atop the bowl and use the scraper to push the contents through. The fine mesh ensures perfectly lump-free flour and confectioners' sugar and is ideal for rinsing tiny grains such as amaranth, millet and quinoa. The wide design also makes for easy cleanup as there are no moving parts to get gunky or trap moisture.
It doesn't hold as much as a traditional cone-strainer, but the flat design prevents the mesh from touching the contents of the bowl and eliminates the difficult-to-clean point.
