Washington County restaurant inspections

Critical violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately. Noncritical violations are defined as items that relate to maintenance of food operations and cleanliness.

Critical violations: Containers of food in cold holding did not have covers. Raw meats were stored above ready-to-eat food.

Noncritical violations: Containers of food were stored on the floor of the walk in. Utensils were stored in water that was not 135 degrees or above.

Hunan Manor

1147 Tahoe Place, Fayetteville

Critical violations: Kitchen staff was eating in a food preparation area. A sign regarding proper handwashing procedure was needed at a handwashing sink.

Noncritical violations: Tongs were stored in direct contact with food on the buffet.

Critical violations: A handwashing sink in the food preparation area was not accessible. Foods on a hot holding shelf were not maintaining a temperature of 135 degrees or above.

Noncritical violations: Small refrigerator in coffee area needs a thermometer.

Fricksters Steakhouse and BBQ

802 Airport Ave., Springdale

Critical violations: Food employee did not wash hands between tasks. Food employees made bare hand contact with ready-to-eat foods. Packaged raw salmon and raw bacon were stored above ready-to-eat lettuce. Sliced brisket was not being cooled in accordance to established procedures. Tomatoes, beans, corn salad and lettuce were at temperature above 41 degrees in cold holding. There was no time control record for salad. Bucket of chemical sanitizer did not have a label.

Noncritical violations: Food employee blew on gloves before using them. Outside smoker is not protected from environmental or insect contamination. Frozen shrimp and frozen ground meat were not being thawed in accordance with established procedures. Ice scoop was stored with handle in direct contact with ice. Food employee was drying food with a cloth. Single-service sour cream container was being reused to store chicken salad.

Critical violations: There was no hand soap at the handwashing sink. Food contact surfaces must be sanitized with an approved sanitizer.

Noncritical violations: Outer openings of food trucks need covering to protect against the entry of insects and rodents. Test strips are needed to check the concentration of chemical sanitizer.
