Saturation, bad weather can make or break them

Amber Cafourek-Belasco, 40, co-owner of Natural State Sandwiches, was boxing things up last year, ready to shut down the business and move back to San Francisco, when she turned to her husband and said: "Maybe we should try our hand at a brick-and-mortar?"

Tino Belasco serves sandwiches at Natural State Sandwiches in Springdale, a business that began as a food truck.
