Fancy spud recipe a must for sharing

Recipes that appear in Idea Alley have not been tested by the Arkansas Democrat-Gazette.

Clarification: The recipe for Orange Rolls like those served at the Crumpet Tea Room and Restaurant in Northwest Arkansas published in last week's column did not specify the type of sugar to use in the frosting. For the smoothest, creamiest texture we recommend using confectioners' sugar, also called powdered sugar. Granulated sugar will work in a pinch, but the resulting frosting may be gritty.

Glenda Wright also responded to the orange roll request. Wright's recipe is identical to the one we published last week. If you missed it, or have lost your copy, send a note or email to the address below. Included with Wright's recipe for the tearoom's rolls was one for the Crumpet Potato.

It sounds too good not to share.

Crumpet Potato

1 large potato

2 tablespoons green goddess dressing

1/4 cup chopped celery

1/4 cup finely chopped bell pepper

2 tablespoons melted butter or margarine

1/3 cup shredded cheddar cheese

1/4 cup chopped green onion

Bacon bits, to taste

Chopped ham, to taste

Sour cream, to taste

Bake potato until tender. While hot, chop potato and place it on a plate. Top with remaining ingredients.

Last week's request for Steak on a Stick by Kim Daniels wasn't the first we've had for such a menu item. Looking through old columns we found several that referred to the dish by the same name served at TGI Friday's when it was at Third and Victory streets in Little Rock.

But this is the first time we've received a response.

"I got this recipe from TGI Friday's when Buster Corley was manager. He went on to open Buster's in the train station, then Dave and Busters," writes Kemp (last or possibly first name not given) via email.

Steak on a Stick

10 ounces honey

6 ounces soy sauce

8 ounces unsweetened pineapple juice

2 ounces lemon juice

1 1/4 tablespoons ground ginger

1/2 tablespoon garlic powder

1 1/2 tablespoons dry mustard

Flank or sirloin steak (amount not given)

Whisk honey, soy sauce, pineapple juice, lemon juice, ginger, garlic and mustard until smooth.

Cut steak across the grain into 1/2-inch strips. Trim fat and cut into 1/2-inch cubes. Marinate 24 hours in honey mixture.

Cook as desired.
