Mandarin oranges make 'manly' treat

Recipes that appear in Idea Alley have not been tested by the Arkansas Democrat-Gazette.

Jenny Ann Boyer can always be counted on for a tasty recipe. This mandarin dessert had my mouth watering just reading it.

Boyer notes the recipe is from Presbyterian Potpourri, Houston, Texas 1975. The book describes the recipe as "A dish that men really enjoy! Rich and delicious!"

Mandarin Masterpiece

1 large package vanilla wafers

2 small cans mandarin oranges, drained

1 can sweetened condensed milk

Juice of 2 lemons

½ pint whipping cream, whipped to soft peaks OR 1 carton Cool Whip

Chopped pecans

Grease an oblong cake pan and line it with vanilla wafers. Arrange mandarin orange segments over the wafers.

In a bowl, whisk together the condensed milk and lemon juice. Pour mixture evenly over the mandarins. Top with another layer of vanilla wafers, then with top with whipped cream. Crumble and sprinkle any remaining wafers and the pecans over the top. Refrigerate 8 to 12 hours before serving.

Makes 12 to 15 servings (unless they like it)!

Souffled Welsh Rarebit

4 eggs, separated

½ pound shredded cheddar cheese

1 teaspoon brown mustard

Dash Worcestershire sauce

Dash hot sauce

Salt and ground black pepper, to taste

4 slices toasted bread OR 2 English muffins, split and toasted

Heat oven to 450 degrees.

In a large bowl, whisk 3 egg yolks (discard or save the remaining yolk for another use), the cheese, mustard, Worcestershire sauce, hot sauce, salt and pepper until combined.

Whip the 4 egg whites until stiff peaks form.

Add a large spoonful of the whipped egg whites to the cheese mixture and gently stir to combine. Using a rubber spatula, fold in the remaining egg whites; try to keep the mixture as fluffy as possible.

Place toast or English muffins in baking pan. Divide the egg-cheese mixture evenly among bread, spreading gently to cover.

Bake at 450 degrees for 10 to 15 minutes or until lightly browned and slightly puffy.

Makes 6 servings.
