When it comes to separating eggs, I usually just do it by hand. Literally. I crack the egg into one hand, catch the yolk and let the white drip between my fingers into a bowl below. If a speck of yolk in the whites won't hurt, I might use the shell method, catching the yolk in half of the shell, while letting the whites fall into a bowl below. Both methods are messy, but effective. Separating eggs by hand means I don't have to give up precious kitchen space for a tool I use only occasionally.

Whisks, on the other hand, get regular use in my house. So when I had the opportunity to try Tovolo's Yolk Out Whisk, I was intrigued. The 12-inch stainless-steel whisk features a yolk-size cup attached to the wires to separate the yolk from the white. A notch on the bottom of the whisk allows it to rest on the lip of a bowl. To use, you lay the whisk across a mixing bowl, making sure the notch is secured on the rim of the bowl while the handle rests on the opposite side of the rim. Crack an egg; let the white fall into the bowl while the cup catches the yolk. This two-in-one tool is ideal for recipes like cakes, meringues, mousses and the like where eggs are whisked after separating.
