Washington County Restaurant Inspections

Information is from state Health Department records. Restaurants are listed in order of inspection date. All reports are from regular food service food store inspections unless otherwise noted.

Priority violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately.

Core violations are defined as items that relate to maintenance of food operations and cleanliness.

Priority violations: Items that are potentially hazardous (such as boiled eggs) need to be labeled with date when the container is opened and discard if any remain after seven days.

Core violations: Paper towels required to dry hands; cloth towel not sufficient. Handwash sink shall be used only to wash hands (corrected). Test strips must be available to ensure sanitizer level adequate; chlorine must be at 50 to 100 ppm or Quaternary ammonia at 200 ppm as recommended by manufacture.

Core violations: They have a log book for control and check temperature in cold and hot holding; every day, three times in the day. However, some food was shown above 41 degrees and no action was taken. Food showed with temperature above 41 degrees more than one time in the day.

Priority violations: Person in charge shall demonstrate regulatory knowledge of the Arkansas Food code. Repeat violations show lack of demonstration or lack of knowledge. Encouraged to attend SafeServ course in Spanish or English (repeat). Items stored in retail cooler inappropriate arrangement, meat items over uncovered produce. Many potentially hazardous foods in cold storage lacked label with date when item prepared or placed into cold storage. Must be labeled with date to ensure item is used or discarded within seven days (repeat). Chemical spray bottle unlabeled (repeat). Neither employee aware of procedure to wash hands (corrected).

Potentially-hazardous frozen foods shall be thawed in a refrigerator/cooler, in microwave, submerged under cool running water or as art of the cooking process. Additionally, the items for sale in retail shall list ingredients and potential allergens. Wiping cloths not in use shall be stored in sanitizer solution. Cloths observed on top of mixer and on counter. Tableware (forks and spoons) shall be stored with handles up to prevent contamination by hands. Three-compartment sink improper order of operation; need wash, rinse, sanitize (50 to 100 ppm chlorine). Freezers need defrosting; ceiling and ceiling vents need cleaning.
