"In all of the restaurants we have, everything is made fresh," general manager Gonzalo Leon said.

Having a seasoned and stable staff not only creates consistency in the food and service, but also contributes to fast preparation. Since all of the dishes are made to order, efficiency is an important factor to customer satisfaction.

The menu features an entire page of lunch specials offered 11 a.m.-3 p.m. daily.

Catering is also available for a range of occasions, including sweet sixteen or quinceanera birthdays, weddings and holiday meals. Typical setup includes a long table draped with tablecloths, a stack of dinner plates and ceramic catering pots with sterno fuel to keep the food warm. The catering can be arranged to be dropped off or full service with waitstaff.
