Finding raw milk

In 2013, Gov. Mike Beebe signed legislation allowing the sale of raw cow's milk in Arkansas (selling goat's milk was already legal). However, the milk must be sold directly from the farm, so it isn't available in stores or at farmers markets. Most cheese-making recipes use temperatures high enough to kill bacteria, but you can pasteurize the milk before using it, if you prefer. To pasteurize raw milk, place the milk in a stainless-steel pot or double boiler and heat it to 145 degrees. After 30 minutes at that heat, chill the pot until the milk reaches 40 degrees.
