Lemon Fluff recalls good ol' school days

Recipes that appear in Idea Alley have not been tested by the Arkansas Democrat-Gazette.

"This recipe for Lemon Fluff sounds a lot like the wonderful dessert served at Oak Grove [in Carroll County] school in the '50s," Lanette Taylor writes.

Lemon Fluff

1 small package lemon gelatin

1 cup hot water

11/2 cups sugar, divided use

Juice of 3 lemons (approximately 1/2 cup)

30 graham crackers

1/2 cup butter, melted

1 (13-ounce) can evaporated milk, chilled

Dissolve gelatin in hot water. Add 1 cup of the sugar and all of the lemon juice. Chill until mixture just starts to set.

Crush graham crackers to fine crumbs and mix with the remaining sugar and the butter. Set aside 3/4 cup of mixture.

Press the remaining mixture evenly into the bottom of a 9-by-13-inch pan.

In a large bowl, beat evaporated milk until thickened, then add the gelatin mixture and beat well. Spread mixture over graham cracker crust. Sprinkle with reserved graham cracker mixture. Chill several hours to overnight.

If the higher price of eggs has you down, Taylor also shares this cake recipe that uses mayonnaise in place of fresh eggs.

Chocolate Cake Without Eggs

2 cups self-rising flour

1/4 cup unsweetened cocoa powder

1 cup mayonnaise or Miracle Whip

1 cup warm water

1 cup sugar

1 teaspoon vanilla extract

Heat oven to 350 degrees.

Combine all ingredients and mix well. Spread batter into a 9-by-13-inch baking dish. Bake until a wooden pick inserted near the center comes out clean.

Editor's note: Taylor did not include a baking time. Similar recipes call for baking the cake 35 minute to 1 hour.
