Restaurant Inspections

Information is from state Health Department records. Restaurants are listed in order of inspection date. All reports are from regular food service food store inspections unless otherwise noted.

Priority violations are defined as items relating directly to factors that lead to food-borne illness and must be corrected immediately.

Priority foundation violations are defined as items relating directly to factors that lead to food-borne illness such as training, equipment plans and documentation and must be corrected immediately.

Core violations are defined as items that relate to maintenance of food operations and cleanliness.

Priority violations: Food prep in area not designated for food prep; no sanitizer. Ice machine has broken top; scoop laying in ice; employee scooped ice. Ice exposed; not protected or covered. No date on tub of chopped onions, cheese block opened, buckets of prepped salsa, tubs of shredded cheese. Whole limes in contact with chopped onions.

Core violations: No lids on spices in smoker area. Outdoor walk-in cooler threshold broken and floor sinking. Cracked ice scoop. Black growth on ice machine baffle. No running water for ice cream scoop.

Priority violations: Ground beef No. 1 45 degrees, No. 2 46 degrees, No. 3 50 degrees, and chicken No. 1 46 degrees, No. 2 51 degrees were made yesterday and did not get cooled to 41 degrees in the six-hour step process required for cooling (repeat, corrected by discarding).

Priority foundation violations: There are two deep pans of refried beans sitting on top of two inches of ice for hours. This will not adequately cool the food to 70 degrees in two hours and 41 degrees in four additional hours. After 15 minutes of cooling, beans A had a top layer of 131 degrees and a bottom layer next to ice 98 degrees. Beans B had a top layer of 138 degrees and bottom layer of 121 degrees. Food must be mixed to ensure even cooling and needs to be in contact with more cold ambient surroundings to drop the 32.5 degrees every hour it must average to be at 70 degrees or below in two hours.

Priority violations: Large dishes are not being submerged in sanitizer for a 30-second contact time for quaternary ammonia sanitizer; must be able to submerge dish for 30 seconds.

Priority foundation violations: Three-compartment sink is not holding water between compartments.

Core violations: Mop sink was not accessible for use; area must be kept free and clear to allow filling and dumping of mop bucket. Fluorescent lights in back storage area are not covered or sleeved (repeat). Boxes of Gatorade being stored on floor in storage area. Ceiling and walls surrounding freezer in outside storage area are not smooth, cleanable, non-absorbent surface; no raw wood or duct tape (repeat).

Core violations: Dial thermometer for cold food management required. Improper re-heat procedure; frijoles 91 degrees. Wipe must be stored in sanitation bucket between uses with sanitizer. Make table top insulation board requires repair. Condensation leak in walk-in cooler requires repair. Improper hot-holding temperature for frijoles.

Core violations: Employee drinking cup in food prep requires lid. Vent hood lighting requires shielding. Uncalibrated food thermometer is 6 degrees off. In-use wipes should be stored in bucket of sanitizer between uses.
