Priority violations: Kraft cheese singles 45 degrees on island, 47 degrees on cheese wall (corrected); packages taken out of cardboard boxes to allow air to flow freely around product to keep it cooler.

Priority foundation violations: Watermelon slices, watermelon quarters, diced cantaloupe chunks and diced watermelon chunks displayed in open-face produce display with an ambient temperature of 58 degrees (corrected); moved to a produce display cooler that maintains an ambient temperature of 34 degrees. Cut melons are a time/temperature control for safety food and must be kept where they can keep an internal temperature of 41 degrees or below.

Excessive debris on equipment, fryer, dish area, floor; clean regularly and completely daily; clean all equipment completely. Walk-in door is rusted on the interior; it is no longer smooth and easily cleanable; replace as needed. Metal on walk-in door handle is pitted and very shard; replace. Freezer has excessive ice crystals around door. Outside unit sleeves of to-go cup lids on floor in open boxes; door open to storage room outside. Manager on duty and employees did not know how to check sanitizer for dishwasher or three-compartment sink. Person responsible for doing dishes was not shown how to check sanitizer or knew how to change chemicals. All employees must be properly trained in all aspects of their duties.
