Reading Nook: 'Hello Taste, Goodbye Guilt!'

When you are diabetic and trying to eat healthier, it can be difficult to find cookbooks that offer a variety of recipes that fit your nutrition needs, sound delicious and are easy to prepare.

Often I’ll find a recipe that sounds promising, only to realize that it requires specialty ingredients I don’t keep in my cabinets. Or, heaven forbid, it has a list of instructions longer than my arm.

If those issues are a reality in your life, you may want to check out Hello Taste, Goodbye Guilt! ($19.95), a cookbook put out by the Mr. Food Test Kitchen. It offers more than 150 diabetic-friendly recipes that don’t require special shopping trips or several hours of prep time.

If you’re not familiar with Mr. Food, the company was founded by the late Art Ginsburg, who had 90-second syndicated television segments that aired across the country. Today, the company’s corporate team includes a diverse group of food professionals who are experts in their fields.

And the American Diabetes Association assisted with the cookbook, so the information and recipes should be reliable and safe. However, the book states it does not represent the policy or position of the ADA. So use your own judgment or consult a doctor.

The book starts with information on reading a nutrition label and portion control. And, while that’s not new to many of us, a reminder never hurts.

The rest of Hello Taste offers sections that include Eye-Opening Breakfasts, Pleasing Poultry, Warming Soups, Stews and Chilis, Sensational Salads, Endless Go-Alongs and Guilt Free Desserts. And the book lists nutrition information and food exchanges for each recipe.

As for interesting recipes,two stood out to me. Edamame Garden Salad, made with corn, black beans, edamame (fresh soy beans) and cherry tomatoes, can be tossed together in mere minutes. And Plantation Sweet Potato Salad is an interesting concoction made with sweet potatoes, honey, mayonnaise, yellow mustard, dried cranberries and chopped walnuts.
