Even after three years in business, Lean Green Gourmet continues to evolve while offering a weekly menu of health-conscious cuisine.

“We do listen to our customers, so all menus [now] provide nutritional information, including carbohydrate count, protein, sodium and fat,” owner Judy Paynesmith said.

Additionally, the chefs have worked to refine their cooking methods to naturally enhance flavors.

Lean Green Gourmet affords a unique dining experience by uniting prepackaged food with healthy, chef-prepared dishes. Soups, sides, desserts and entrees are made with ingredients that are predominantly organic and locally sourced. The finished product is flavorful meals that are low in fat, free of cholesterol and plant based.

The heart-healthy, ready-to-eat selections are an effective way to ensure proper nutrient content of anyone’s diet.

“If what you eat is packed with nutrients, cravings disappear and you feel full. Our customers often tell us, they feel so much better after a week on our diet style," Paynesmith said.

Each week a menu of nine items is featured. At least seven of the dishes are free of gluten, and requests for a completely gluten-free order can be accommodated.

Orders are requested by 8 p.m. Friday, and the meals are prepared and cooked on Saturday and Sunday.

“We try to cook just enough to fulfill orders, but there is sometimes extra,” Paynesmith said.

Those extras can be purchased at the store on Monday and Tuesday, and whatever is not sold by Tuesday afternoon is donated to the Peace at Home Family Shelter.

Paynesmith is proud to have developed a way to bring conscious eating into the forefront of today's busy, grab-and-go lifestyle.

“I feel like I'm doing a real service by helping people be healthier,” she said.

Lean Green Gourmet has partnered and combined its menu with chef GW Chew, co-founder of Something Better Foods, to provide cooking classes and personalized consultations. Also offered is the 60-day Challenge, a research-based program that aims to help clients live longer and healthier lives.

Each Tuesday, a new menu is posted online at leangreengourmet.com. Customers also can order by calling (479) 443-2327. Orders placed by 8 p.m. Friday are guaranteed ready for pick-up or delivery the following Monday. Delivery is available for a nominal charge from Fayetteville to Bella Vista. Customers can leave a cooler in which the driver can deposit the food if they will not be home.

A note to new customers — the packaging is made from biodegradable No. 7 plastic and is not microwavable.
