Subscriber onlyLITTLE ROCK — This salad is sweet and savory. A mixture of fresh herbs works best, rather than just one variety. If you can’t find dried cherries, use dried cranberries. Wheat Berry Salad With Oranges, Cherries and Pecans 1 orange, peeled and cut into segments, juice reserved (see note) 1 tablespoon chopped fresh herbs such as a combination of thyme, sage and rosemary 1/4 cup extra-virgin olive oil, plus more as needed 2 tablespoons red wine vinegar 1/4 teaspoon salt, or more to taste Ground black pepper 2 cups wheat berries, cooked according to package directions (to yield about 4 cups) and cooled to room temperature 1 medium red onion, cut in half from top to bottom and thinly sliced 1/2 cup dried cherries, plus more for garnish 1/2 cup coarsely chopped toasted pecans, plus more for garnish Whisk the juice from the orange, herbs, oil and vinegar in a large bowl to thoroughly combine. Although the 12th-ranked Lady Volunteers didn’t practice Monday, Burdick was working out on her own when she fractured the fourth metacarpal of her shooting hand. There is no timetable for Burdick’s return, though the 6-2 sophomore is expected back before the end of the season. Burdick ranks fourth on the team in scoring (8.8 points per game) and third in rebounding (6.5). She had started 11 of Tennessee’s first 12 games. The Lady Vols (9-3 ) open their SEC schedule Thursday at No. 18 South Carolina (11-1 ).
