Fayetteville restaurant to host italian wine dinner

Vetro 1925 will host an Italian wine dinner on July 16. Guests are welcome to arrive before the din- ner begins at 7 p.m. for a cocktail or aperitif in the bar.

Five courses will be prepared by chef Alan Dierks and paired with Italian wines. A guest speaker rep- resenting one of the vineyards will present and describe the wines.

Course samplings will include a pappardelle di cinghiale with wild boar shoulder — made-in-house wide fettuccine noodles that are finished with an espresso-red wine glaze; and cappa santa e salmone (applewood-smoked salmon) with pan-seared diver scallops, sweet corn puree and microbasil.

Cost is $95 per person, and reservations are required.

Located in the renovated Cravens building, Vetro 1925 brings Italian villa- influenced cooking and metropolis-caliber style to Northwest Arkansas.

Owner Angelo Am- abile’s aspiration is to share his heritage of Italy through the experience of food and wine. “Italian cooking is about doing

as little as possible with the fresh- est ingredients,” Amabile said.

As much as possible is made in the kitchen of Vetro, includ- ing several of its own pastas, des- serts, fresh mozzarella, dressings and bread. Embracing the Italian method of preparation, sauces are made to order. House-made focac- cia with seasoned olive oil is served with each entree.

Lunch selections include familiar Italian favorites like bruschetta, cal- amari, Caesar salad, paninis, chick- en piccata, lasagna and fettuccine alfredo with grilled chicken. Most items

are priced $6-$9, although a few secondi dishes, such as grilled salmon and a 14-ounce ribeye, are offered.

A daily, three-course lunch special offers a choice of soup or house salad, an entree and dessert for $15. Dierks selects from a va- riety of house specialties, includ- ing lasagna, linguine and clams or chicken marsala, to offer each day and pairs it with a dessert for a full, satisfying meal that can be enjoyed during the lunch hour.
