It is a risk and a challenge to open any kind of business, particularly at a time like this. Dario Amini has decided to take the plunge. By Jan. 1, he hopes to open a restaurant called Petit Bistro at the building formerly known as an Ozark Mountain Smokehouse in north Bentonville.
