Critical violations: Need time marked on foods that use time as a control. Cool foods properly from 135 degrees to 70 degrees in two hours or less. Employees must wash hands before putting on gloves.
Noncritical violations: Ice scoop laying down in ice wait station. Keep scoop handle up and out of ice. Store wiping cloths in sanitizer.

Ken’s Hiwasse Dairy Freeze

Critical violations: Storing boxes of lettuce on walk-in refrigerator floor. Dishwasher is not sanitizing dishes. Raw hamburger meat is 43 degrees. Hot dogs are 44 degrees. Must be kept at 41 degrees or below. Gravy is 94 degrees. Must be kept at 135 degrees or above. Roast beef and prime rib being thawed at room temperature. Must be thawed under refrigeration. Storing spatulas in standing water. Must be kept dry and clean. Sanitizer bleach solution was at 0 ppm. Must be 50-100 ppm.
Noncritical violations: Light in upright refrigerator near grill is not secure. Duct tape is being used to repair shelving in upright refrigerator.
Hiwasse Candy Store

Critical violations: Bleach solution in sanitizer bucket was at zero ppm.
Noncritical violations: Test strips for bleach sanitizer was not available at time of inspection. Fluorescent lights in three compartment sink and meat cutting area needs sleeves.
