We feature fish tacos with broiled wild Alaskan cod and shredded vegetables topped with our special sauce. Learn to make homemade mayonnaise and rémoulade, a spicy version of tartar sauce, to accompany the tacos. A hearty winter salad wonderfully marries orange-infused red quinoa with slowly-roasted beets, feta cheese and fresh mint ~ another creative salad developed by my friends Karen & Austin in LA. Finally, no Carribean meal is complete without beans. Learn to make creamy black beans that remain intact seasoned with roasted and freshly ground spices.
